Simple Breakfast Muffins

Nourishing and satisfying, these simple muffins – with a smoky cheddar cheese undertone – can be batch cooked ahead of time. A breakfast of champions, with no hassle in the mornings – a great way to start your day.

Step one:

Preheat the oven to 180°C and pop 12 cases into a muffin tin.

Step two:

Whisk the eggs in a big bowl.

Step three:

Add in the melted butter, milk, cheese, spinach and spring onion.

Step four:

Crumble in the stock cube and mix in the flour.

Step five:

Bring everything together into a combined mixture – careful not to over mix.

Step six:

Pop the mixture into the cases and bake for 20-25 minutes until golden brown and cooked through.
