Step one:
In a saucepan, combine the butter, water, and sugar. Bring to the boil, stirring until the butter has melted.
Step two:
Add the flour and beat well until the mixture forms a smooth ball that leaves the sides of the pan clean.
Step three:
Remove from the heat and stir in the grated cheddar. Beat in the eggs one at a time until you have a smooth paste. Season well.
Step four:
Heat the oil in a deep pan over medium-high heat. Test the temperature by dropping in a small piece of dough. It should sizzle and rise to the surface.
Step five:
Using two spoons, drop small spoonful’s of the dough into the hot oil. Fry in batches for about 5 mins, turning occasionally, until golden and puffed.
Step six:
Drain on kitchen paper and serve immediately with extra finely grated cheese on top.
