Step one:
Heat oil in a deep pan to 200°C.
Step two:
Set up three bowls: seasoned flour in the first, beaten eggs in the second, and breadcrumbs mixed with parmesan in the third.
Step three:
Cut the cheese into small pieces and stuff one piece inside each olive.
Step four:
Dredge each stuffed olive in the flour, then the egg, then the breadcrumb mix. For extra crunch, double-coat by repeating the egg and breadcrumb steps.
Step five:
Fry in small batches for 2-3 mins until golden and crisp. Drain on kitchen paper and sprinkle with extra parmesan before serving.
